Roasted Tomatillo Sauce


ROASTED TOMATILLO SAUCE
Broil or roast 18 de-husked tomatillos and chili pepper (s) on a baking sheet in oven until they are browned and chilis are soft. This will take about 5 minutes on each side. Cool and blend them in food processor until an almost smooth consistency. Add a chopped sauteed onion and 4 sliced cloves of sauteed garlic, 1 tsp salt and pepper. Bring to a boil and add 3 cups of broth or water. At this stage the sauce can be used for various dishes.
BAKED TOMATILLO CASSEROLE
I made a simple and easy casserole: Scoop a bag of good restaurant style tortilla chips into an oven proof casserole dish. Crunch the chips down
a bit. Add lots of cilantro to the sauce, heat it and ladle onto the chips. Spread some Mexican Crema or Sour Cream on top and finish with a layer of a Mexican melting cheese, Jack Cheese or mild Cheddar. Bake in a 400F oven for about 15 minutes. Optional cooked meats can be added.
